We planted this grass several years ago, would it damage this grass if we were to disc or plow less than one foot into the ground? Would it be beneficial to the grass to do this process?

Kelberg Bluestem is a perennial grass that is strongly rhyzomatious. The rhizomes grow along just under the surface of the soil and if you break these you will cause each to grow a new stalk. So light disking should increase the density of the stand. If you disc too deep you will put much of the root and rhizome material too deep for it to put up and sprout in the early summer and kill the plant.
